Meet the crew
MECO Coffee Collective hails from two parts of our nation, Maine and Colorado. Due to unfortunate circumstances during 2020 and 2021, the owners previous business, Monzu panini and pasta food truck, was humbly dissolved. This led to a new adventure for Isaac Olson and Shane Stinn, partners and owners of MECO. Having saved a small piece of their previous business (MECO Cheesy Bits), they set out to find a brick and mortar location that not only suited their needs and wants for growth and development but also offered a space for others in the community to gather and show case their own local, artisanal companies. Thus MECO Coffee Collective came to fruition opening its doors in early August 2021 offering a quaint space to enjoy a cup of coffee or a house made pastry as well as a brightly lit area showcasing a slew of Colorado artists and crafts-people. You can find a little piece of joy for everyone in your life or for any occasion and the owners hope to be able to continue with the Maine and Colorado merger and be able to expand their adventure and concepts back to the East Coast in the near future.

Shane Stinn
A Colorado native, Shane has been working in the hospitality industry for almost a decade. Focusing on customer relations, marketing and graphic design, Shane loves the excitement behind creating new business relationships and partnerships as well as creating the back bone for any company. He strives to provide excellent customer service in any environment he is in and takes pride in making every customer feel welcome. Pairing his customer service and coffee skills, he works closely with his partner Isaac. Shane has excelled in producing exponential support through the process of opening both the food truck and MeCo crackers. The excitement continues to grow as different phases of the business come and go and the work towards both he and his partners brick and mortar is a very prominent driving force in his day to day life.

Addie & Thea
Rescued in Colorado, both Addie and Thea show their love for their parents by being the best supporters. They excel in treat tasting and hug giving as well as being the cutest. They fully support visits to the shop as well as meeting up with other fur friends for a nice and refreshing “wag & whip” with a treat on top.

Isaac Olson
Born and raised in Maine, Isaac acquired his associates degree from the New England Culinary Institute in 2009. He soon moved to Colorado and began a new journey that opened his eyes to a world of many possibilities. After working at several Boulder County eating establishments, Isaac realized that the time spent running other businesses would be better invested in his own endeavor. After meeting his partner Shane in 2017, the pieces fell into place and Monzu opened in the Summer of 2018. MECO crackers was released in the Fall of 2019 allowing for another revenue stream to their very popularly growing food truck. Unfortunately, COVID-19 hit in the Spring of 2020 and both he and his partner decided to liquidate the food truck and just focus on MeCo.
